Jacaré à Tropical ( Crocodile to Tropical )

160g of Filet of crocodile
100g of cashew
100g of cashew
50g of cheese curd
30ml of Cachaça
50ml of juice of cashew
50ml of aceto balsamic
10g sugar
30ml butter of the earth
Salt to taste

Method of preparation:
For the sauce in a frying pan on low fire add the juice of cashew, aceto and sugar and a pinch of salt, let syrup form, reserve.
For the cheese, cut into cubes and grill in a frying pan, reserve.
Cut the cashew into cubes, heat the butter in a frying pan and add the fruit, season with salt and pepper to taste and add the rum to flambé and let braise for 1 minute, finally add the cheese and stir for 20 seconds.
Grill alligator eat the butter of the land, directly on the plate only seasoned with salt. Have to mount the file in a corner, along with the cashew cheese and decorate the dish with sauce and cashew nuts. Developed by Rodrigo Carvalho.
